The Saturday after Thanksgiving and I still had a fridge full of leftovers. We where tired of leftovers!
I got creative and made Turkey Quesadillas and Mexican Mashed Potatoes.
I took a flour tortilla put it in a frying pan with a little vegetable oil. I added diced leftover turkey, cheese and green chilies on top. I folded over the tortilla. I let it heat up on both sides and brown a little.
For the Mexican mashed potatoes, I put some leftover mashed potatoes in a pan. I added a little half and half to loosen up the potatoes, several handfuls of cheddar cheese and a few spoonful’s of the green chilies. Mixed it and heated it through.
I served it with salsa and sour cream.
